Cheesy Spinach Bites

INGREDIENTS:
• 1 sheet of defrosted frozen puff pastry
• Olive oil 2 teaspoons
• Garlic cloves 2, minced
• Fresh spinach 200 grams, chopped
• Salt & pepper, to taste
• Fresh Parmesan cheese 50gms, finely grated
• Feta Cheese 50 grams, crumbled

DIRECTIONS:

1. On a flat surface sprinkle little flour, lay down the defrosted puff pastry and with the help of a rolling pin roll the pastry into a 10 inches x 14 inches rectangle of even thickness.

2. Heat a large sauté pan with olive oil. Add the minced garlic and sauté for a minute in medium fire. Add the chopped spinach and allow to cook for 2-3 minutes until it is soft and cooked. Sprinkle salt and pepper for taste. Spread the spinach evenly on the surface of the rolled out puff pastry sheet. Sprinkle the grated Parmesan and Feta cheese evenly on top of the spinach, covering the whole pastry sheet.

3. Keep the longer side of the pastry facing you and roll it by pushing forward and wrap it into a long roll. Now wrap the roll in parchment paper and keep in the freezer for30 to 45 minutes. This process will make it easier to cut into circles.

4. Preheat the oven to 400 degrees. Line a large baking sheet with parchment paper and keep it aside.

5. Take the pastry roll out of the freezer and cut the roll into half, then cut thathalves into quarters and cut the quarters into three pieces. In this way if you cut, you will get even circles/bites. Place each circles/bites onto the parchment lined baking sheet and bake them in the oven for 20 minutes. Serve hot.
