Beetroots are enriched with valuable nutrients that help lower your blood pressure, fight cancer and inflammation, boost your stamina, and support detoxification. It is used for treating anemia, indigestion, constipation, piles and kidney disorders.
INGREDIENTS
• Small Beetroot 2 nos. peeled, cooked and chopped into tiny cubes
• Ghee or Clarified Butter 1 tablespoon
• Mustard Seeds 1 teaspoon
• Sesame Seeds 1 teaspoon
• Fresh Curry leaves few
• Thick fresh Yoghurt 3/4 cup or 200 grams
• 2 small beetroot, cooked, peeled (or use 3-4 canned baby beets), chopped into 5mm
Method
1. Take a fry pan, heat it with ghee over medium low heat.
2. Add mustard seeds, sesame seeds and curry leaves one by one and wait for the mustard seeds to pop.
3. Keep it aside and allow to cool.
4. In a bowl whisk the yoghurt and add the cooked and cubed beetroots and season with salt and pepper.
5. At the time of serving add the fried mustard mixture, mix well and serve.
