Ingredients
2 tbsp butter
2 1/2 tbsp all purpose flour
1/2 cup warm milk
3/4 cup boiled and crushed sweet corn kernels
1/4 cup finely chopped coriander leaves
2 tsp finely chopped green chillies
1/3 cup grated processed cheese
Salt to taste
Bread crumbs for coating
Oil for deep-frying
To Be Mixed Into A Batter
1 cup all purpose flour
3/4 cup water
Method
In a deep non-stick pan, heat the butter, add the all purpose flour and cook for 1/2 minute. Now add the milk and allow to simmer till the mixture thickens and leaves the sides of the pan, while stirring continuously.
Switch off the flame and transfer to a plate. Add the crushed sweet corn kernels, grated cheese, coriander leaves, green chillies and salt. Let it cool completely.
Mix well and divide the corn mixture into 15 equal portions and roll each into a round shaped ball.
Dip the balls in the flour batter and roll them on the bread crumbs till they are evenly coated from all the sides to give a crispy outer shell.
Heat the oil and deep fry a few balls at a time on a medium flame until golden brown in colour. Drain on absorbent paper.
Serve with tomato ketchup or Mayonnaise.
