4 Potatoes (with dark brown skin and few eyes will be perfect), peeled and grated
1/2 cup milk
1 cup all-purpose flour
1/2 cup grated Parmesan cheese
1/2 cup shredded Cheddar cheese
1 teaspoon onion salt or 1/2 cup chopped fresh onion
1 teaspoon baking powder
1 teaspoon salt
1/2 teaspoon ground black pepper
1/4 cup cooking oil
2 tablespoons butter
Transfer the grated potatoes into a kitchen towel and squeeze as much liquid as you possibly can.
In a large bowl, combine potatoes, eggs, milk and mix well.
Stir flour, Parmesan cheese, Cheddar cheese, onion salt or chopped fresh onion, baking powder, salt, and black pepper into potato mixture using a fork.
Heat oil and butter in a large skillet or a frying pan over medium high heat.
Take about 2 tablespoons of potato mixture and place it on the frying pan and use the back of the spoon to flatten the patties
Cook about 3 or 4 patties at a time, until golden brown or about four minutes per side.
Transfer the pancakes to a plate lined with paper towel to remove excess oil.
Serve with any dipping sauce of your choice.
