black pepper<br />1/4 cup cooking oil<br />2 tablespoons butter</p><p><strong>Method</strong></p><p>Transfer the grated potatoes into a kitchen towel and squeeze as much liquid as you possibly can.</p><p>In a large bowl, combine potatoes, eggs, milk and mix well.</p><p>Stir flour, Parmesan cheese, Cheddar cheese, onion salt or chopped fresh onion, baking powder, salt, and black pepper into potato mixture using a fork.</p><p>Heat oil and butter in a large skillet or a frying pan over medium high heat.</p><p>Take about 2 tablespoons of potato mixture and place it on the frying pan and use the back of the spoon to flatten the patties</p><p>Cook about 3 or 4 patties at a time, until golden brown or about four minutes per side.</p><p>Transfer the pancakes to a plate lined with paper towel Now add the milk and allow to simmer till the mixture thickens and leaves the sides of the pan, while stirring continuously.</p><p>Switch off the flame and transfer to a plate. Add the crushed sweet corn kernels, grated cheese, coriander leaves, green chillies and salt. Let it cool completely.</p><p>Mix well and divide the corn mixture into 15 equal portions and roll each into a round shaped ball.</p><p>Dip the balls in the flour batter and roll them on the bread crumbs till they are evenly coated from all the sides to give a crispy outer shell.</p><p>Heat the oil and deep fry a few balls at a time on a medium flame until golden brown in colour. Cut into half and scoop out the flesh into a blender.</p><p>Blend it along with sugar and half the quantity of water. Remove it from the blender and strain. Now add the tomatoes sauté for a while, add the spice powders and mix well. Add the crumbled paneer, salt and mix well. Allow to cook for 3 to 5 minutes.</p><p>Delicious Paneer Bhurji is ready to serve.
